I've only spent 10 days of my life in Italy but it was enough to capture my affection!
Feeling sentimental about it all, I made an Italian meal this weekend.
Ingredients needed: pasta, tomatoes, mozarella, fresh basil, olive oil, balsamic, garlic, salt and pepper, & bread
Our first course was the traditional Caprese Salad:
Layer one tomato slice, one mozarella slice and one basil leaf.
Drizzle with olive oil and balsamic vinegar.
Dust with salt and pepper.
New discovery: garlic already pressed! Yippee! I used this in the pasta along with:
chunks of mozzarella, tomato pieces, basil leaves, olive oil, salt and pepper.
Mix and serve while noodles are hot.
A fresh meal for a beautiful spring evening!
