It's What's for Dinner: Healthy-ish Hamburger and Fries Casserole

Ever have a craving for meat and potatoes?! I did tonight! I had LIMITED ingredients in my fridge so I googled "ground beef french fries" and found a yummy recipe.

Here we go.

You will need:

* butter (just a tad)

* celery (1 c chopped)

* onion (1 c chopped)

* Ground beef (I suggest fresh and preferably grass-fed)

* Tomato soup (1 c)

* Ketchup (1/2 c)

* Salt and pepper

* One bag of frozen fries (I suggest a healthy version: NO TRANS FATS)

Prep time: 10 min. Bake time: 25 min. at 400

1) Saute 1 cup of celery and 1 cup of chopped onion in butter until softened.IMG_0688

2)Add ground beef and brown slightly (it will finish cooking in onion)

3)Layer beef mixture, soup, ketchup and some salt and pepper into a baking dish.
4)Top with fries. Bake for 25 min. at 400
